Chef Carlos Rivera, Executive Chef at La Costa Seafood

Meet the Chef

A Story Rooted in the Sea

Chef Carlos Rivera brings 15 years of culinary experience to every plate at La Costa Seafood. Born from the vibrant food culture of Puerto Rico and shaped by rigorous training at Johnson & Wales University in Miami, Carlos is a Puerto Rican-Miami fusion specialist who has spent his career perfecting the art of coastal cooking.

His approach blends the bold, sun-drenched Caribbean coastal flavors of his upbringing with modern American culinary techniques — creating dishes that feel both deeply familiar and genuinely new. Every preparation reflects a chef who understands the ocean not just as an ingredient source, but as a living tradition.

At the heart of his menu are family recipes passed down through generations, carefully reimagined for the contemporary dining experience. These are not reproductions — they are conversations between past and present, between Puerto Rico and Miami Beach, between memory and craft.

Our Philosophy

Fresh. Always.

Every morning, before the kitchen opens its doors, La Costa's team is on the dock. We source our catches directly from local Miami Beach fishermen — relationships built over years, grounded in mutual respect for the sea and for the guest sitting at our tables.

Fresh is not a marketing word at La Costa. It means the snapper on your plate was swimming in the Atlantic this morning. It means the shrimp in your mofongo were selected by hand, not by algorithm. It means our menu shifts with the tides — and that's exactly how we want it.

Our menu is built on family recipes passed down through generations — from grandmothers' sofrito to seaside ceviche traditions carried from Puerto Rico to Florida. Chef Carlos Rivera has reimagined these foundations for the modern dining experience without erasing what makes them irreplaceable.

La Costa Seafood is premium because we refuse to cut corners — on sourcing, on technique, or on hospitality. But premium doesn't mean distant. Every guest at our table is a neighbor, a celebration, a reason to cook something extraordinary.
